Preheat the oven to 350°F. Slice each apple in half from top to bottom. Use a melon baller or paring knife and metal spoon to scoop out the core and seeds. Arrange flesh side up in a baking dish filled with about 1⁄4 inch of water, and place a small pat of butter in each apple cavity. Bake, covered, for 30–45 minutes until apples become tender (baking time will vary based on apple size and type).
While apples bake, combine the crumbled cookies, chocolate chips and nuts in a bowl. Carefully remove apples from the oven and divide the topping mixture evenly, mounding onto the top of each apple. Return to the oven and bake, uncovered, an additional 5 minutes. Transfer to a plate and drizzle with caramel sauce. Refrigerate any leftovers.
